I’m not one to blow my own trumpet but I have to say this thai mango prawn salad is definitely a tasty creation and what’s more it’s unbelievably healthy and quick to make; I don’t know about you but when the sun is shinning and I’ve got home from a long day at work the last thing I want to do is spend the remaining hours of sunshine in the kitchen. So it’s for this reason that I just love this recipe.

In terms of nutritional benefits on the brain, well you’ve got plenty of vitamin b6 found in the mangoes which boost brain functioning, the antioxidants found in the courgettes which help slow down ageing and improve cell renewal, and the abundant amount of copper and magnesium found in the cashews helping improve your energy levels and relax your nervous system. Well, it’s no wonder I feel so damn good right now!
