A healthy risotto that’s comforting, warming, healthy, delicious, nutritious, simple……Have I left anything out? Probably. But let’s just say this healthy risotto is the perfect midweek dinner dish. The combination of salmon, pine nuts and spinach makes it a power house of wonder for our brains.
