Gingerbread men (vegan/gluten free)

Gingerbread men are one of those childhood treats I could never resist getting; looking up at me from the counter with their smiling faces, I swear they were just begging to be eaten. The other day I had that familiar gingerbread craving and thought why not bake a guilt free version, meaning I could then just eat them all day every day, (crazy I didn’t think of this earlier really).

The great thing about ginger is it really is a miracle worker, a natural medicine for the body and mind. In fact it’s been dubbed as one of the worlds healthiest foods; for centuries it has been used as a the number one herbal remedy for nausea, stomach cramps and joint pain. In India they really respect this powerful little spice, using it for bathing, washing, cooking, drinking in tea, they really can’t get enough of it and I can see why. It’s full of anti- inflammatory properties and great for improving absorption of nutrients into the body. Plus due to it’s calming effects on the tummy it’s a perfect tonic for symptoms of anxiety, settling and easing those butterflies.

In other words, hung over? Have a gingerbread man. Feeling stressed? Have a gingerbread man. Needing a boost? Have a gingerbread man. Feeling ill? Have a gingerbread man.
