Mango, Ginger & Cashew Balls

Oh boy, you have to be careful not to scoff these little mango, ginger & Cashew balls all in one go!

I came up with this creation due to two reasons, a) I have a little mango obsession at the moment and b) I am trying to cut down my refined sugar intake to help with annoying symptoms I get from PCOS (Polycystic ovary syndrome), primarily poor skin and this is all believed to be linked to insulin levels. 

But of course, PCOS or no PCOS, sugar ain’t good for us. 

If you’re anything like me, my most vulnerable time for a quick sugar pick me up is mid afternoon around 3pm. My energy levels drop and I would rather be watching Netflix in the bath than sitting at a computer, working. If I have chocolate about or biscuits, they will be eaten. No avoiding it. Unless….. there is a alternative that will give me that same boost but without the refined sugar. Now these do, of course, have natural sugars in them from the dates and mango, hence it’s important not to scoff them all in one go. But, they are a million times better than those refined sugar snacks and they have a myriad of benefits too. 

Take the turmeric & ginger for example, natures anti-inflammatory and digestion soother. Your body loves these root spices. And the mango; well these powerful and delicious fruits help lower cholesterol, are a great source of fibre, which helps with degenerative disease such as heart conditions and certain cancers, and they help clear the skin which is a great bonus given a key factor to me in cutting down refined sugar is my acne prone skin, (and yes i’m sad to say at 31 we can still get acne). Last but not least the cashews; well, i’ve banged on about the powerful properties of cashews many a time. But to remind yourself, you can read all about it here. 

Oh and as always with my recipes these are simple to make. In fact they are so simple you could probably make them in your sleep. Just bung it all the food processor, roll them into balls and your done. Mid-afternoon snack sorted!
