Cauliflower Rice & Pomegranate Salad

I have literally just discovered the wonders of cauliflower rice and now I make a big batch every couple of weeks. Put half in the freezer and with the rest make a few mid week meals. 

Here I use the cauliflower rice as a base for a deliciously mood boosting salad but feel free to pick and choose what you want to add as i’m finding cauliflower rice pretty much goes with anything!

What makes cauliflower VYM approved:

  • Boost brain and heart health due to it’s anti-inflammatory properties
  • Has lots of Vitamin B which improves memory and protects the brain from age related symptoms
  • Improves digestion with the abundance of fiber, meaning we feel lighter and more energised in mood

Top tip: Boiling reduces it’s super power, so always try lightly sautéeing as suggested in this recipe or roasting

Cauliflower Rice & Pomegranate salad

  1. Seeds from 1 pomegranate (approx. 2 tbsp.)
  2. 1 cauliflower with leaves and main stalk removed
  3. 2 handfuls of frozen peas
  4. 3 spring onions
  5. 2 garlic cloves crushed
  6. Juice of 1 lemon and grate rind
  7. Handful of chopped mint
  8. 1 tbsp olive oil
  9. Block of feta, chopped
  10. Chopped walnuts
  11. 1 tbsp honey
  1. Turn the oven to 180 degrees.
  2. On a baking tray lightly cook the walnuts with a drizzle of honey. Remove after 10 minutes
  3. Pulse cauliflower in food processor until becomes couscous like consistency
  4. Heat a frying pan with oil. Add the crushed garlic, frozen peas and spring onions. Cook for a few minutes
  5. Add the cauliflower and sauté for another 5 minutes, stirring to ensure it doesn't stick to the pan
  6. Stir through the chopped mint, feta, lemon and pomegranates before serving
  1. Feel free to add anything else you want. Sometimes I add chickpeas or baked sweet potato chunks.
