Avocado Cashew Pesto

This is a classic VYM recipe; it’s super quick, majorly tasty and a one blooming good mood enhancer. You might have heard about the ‘healthy fats’ in avocado’s and wondered what’s so healthy about it; well, healthy fats have this amazing ability of increasing dopamine and improving blood flow to the brain. In doing this our brains work better, our memories improve, our ability to absorb information increases and we feel a general improved sense of happiness and health! Winner, right?! But wait I have more; also in my avocado pesto is the wisely chosen Cashew. I have created quite a few recipes using this powerful little nut, for just that reason, it’s so damn powerful. The copper and magnesium make it calming for the nerves whilst energising for the brain. Top tip : I always make a big bowl of something cashewy the night before an interview as that relaxing but energising combo is just what’s needed. Check out another favourite of mine here.

Once you’ve made a batch of this, there is so many ways you can use it; as a dip, as a pasta sauce, as a side for your lunch salad, as a spread in a sandwich, or an accompaniment to chicken or fish. My favourite is probably with some cherry tomatoes and some courgetti spaghetti. Simple, healthy and made in 5 minutes.
