Sundried Tomato Cashew Pesto

Having a jar of this sundried tomato cashew pesto in my fridge is essential. Not only does it make a great healthy dip alternative, it’s also just perfect for those ‘no time to cook’ evenings. Literally bung a couple of handfuls of pasta (I prefer gluten free) in a pan to cook, add whatever veg you have in your fridge (spinach & peas go pretty well I think). Then, last but not least, finish by stirring in a few spoonful’s of this delicious mind healing homemade pesto; and no worries if you haven’t made any up yet, the making of the pesto itself is super speedy too. Oh and it goes without saying but it’s massively good for you mind too! ☺

As always I could gabble on for ever and a day about the mind loving qualities of this sundried tomato cashew pesto recipe but I’m sure we all have some eating to do. So, I’ve managed to whittle it down to a list of my top three facts.

  1. All three ingredients are bursting with magnesium and potassium meaning at the same time as relaxing your nerves, brain and muscles, your blood pressure is being lowered too.
  2. Sun-dried tomatoes are bursting with fibre and iron. This significantly improves your digestive system and leaves you feeling energised and healthy
  3. Cashews (considered one of the worlds healthiest foods – see our other cashew recipe here) have a million and one amazing properties. But one of my favourites has got to be the boost of serotonin they provide us with. This results in happy moods all round, which we of course love to promote here at VYM.
