Pearl Barley Detox Dish

You’ll be happy to know I’ve found  some more amazingly powerful ingredients to tell you all about. Not only that, but having put them together with a few more of my favourite detox delights, I realised they create quite the perfect detox dish. 

So, what’s in the VYM SPOTLIGHT this week? Well this dish is quite literally an all star cast, but the lead role has to go to the artichoke. Admission here; I don’t think I have ever cooked or used an artichoke in a recipe before! Crazy given that I now know how great they are for us. However, my slight obsession for this dish at the moment means i’m well on my way for making up for that lost time.

Artichokes are quite literally a ball of antioxidant, mineral, goodness. So much so they are actually rated as no.7 in the richest antioxidant foods list. What does this mean? Well, every-time you eat an artichoke you are boosting your immune system and protecting your body from dangerous diseases and life threatening illnesses. Not only that but due to the combination of fibre, vitamins, magnesium & antioxidants, your liver is left cleansed, your digestive system rejuvenated and your essential organs soothed. 

But this dish doesn’t stop there. What with the pearl barley, lemon and asparagus all having the essential detoxing effect too, this recipe is pretty much a yoga class in a meal, with significantly less effort required.
