Asian noodle & Kale Pesto

If there was homemade pestos anonymous I would be obliged to sign up, for I am a fully fledged homemade pesto addict. I just love the way you can get a heck load of veg and nuts into your system just with a drizzle of oil and a quick wizz of the processor, Kale pesto being a perfect example. It’s a healthy brains’ dream! But it’s what you put with it that I always have the dilemma over and if I’ve had a week of pesto and fish or pesto and pasta or pesto and risotto, I do start to miss my asian inspired meals. 

Never one to shy away from a challenge, I got my three favourite asian ingredients out, (chilli, soya sauce and rice noodles), got my loyal kale pesto components ready and voilà, an italian/asian fusion was born. 

Note: I chose cashews and kale as the components to my kale pesto purely because a) they taste good and b) they really fuel up your brain, but don’t be afraid to play around with the nuts or vegetables you use, I recon spinach with almonds would be a great combo and of course they have lots of amazing properties too so you won’t be going without. I also chose cellophane noodles as they are naturally gluten free but I recon soba noodles would also be great; made from buckwheat flour, they would add a little more nuttiness to the dish.
