Broccoli, feta & almond quiche

This is a real winner in the taste and health category, what with it’s main ingredients consisting of two of the worlds most healthiest foods, broccoli and almonds, and the fact that it’s a quiche (I mean who doesn’t like quiche).

I have written about the benefits of both broccoli and almonds in other blogs but here’s a little refresher for you just in case:

Almonds are known to have many physical health benefits such as keeping our hearts healthy and bones and teeth strong. However there is also evidence that almonds contain nutrients that our brains need to keep active and therefore help fight the risk of diseases of the brain such as Alzheimer’s. Ground almonds bind in a similar way to flour and so therefore make a perfect healthy substitute for pastry.

Broccoli is one of those vegetables that provide so many benefits it’s difficult to know where to start . Funny enough it actually increases in it’s power when cooked or stemmed, however over cooked and it will loose its nutrients, so always ensure a little crunch is left. It has many similar properties to Almonds, primarily being it helps keep our hearts healthy by lowering cholesterol levels. The presence of omega 3, Sulforaphane and Kaempferol means it’s also a powerful anti-inflammatory, helping in things like improving blood vessels, reducing arthritis pain, and improving skin conditions such as Eczema. And of course what we love most here at VYM is that there are several properties found in Broccoli (such as potassium) that helps our nervous system and brain, healing, calming and protecting it.
